We have some dear friends from Chicago in town for a visit and I decided on an 11:39pm whim that we should make some candy… I really have NO experience making candy, but I wanted soft caramels and I had just bought a candy thermometer and had all the ingredients… so why not?

What a tasty experiment it turned out to be!  We ended up with about a pound of really delicious vanilla caramels… we have probably eaten a quarter pound of that just this morning.  MMmmm… a tummy ache is coming.


*Here’s the recipe!

1 c butter
1 c br sugar
1 c wh sugar
1 c  light corn syrup
1 sm can condensed milk
1 tsp vanilla

Combine butter, sugars, and corn syrup in a 3 qt pan.  Bring to boil over medium heat.  Remove from heat and add condensed milk, stir and return to heat.  Monitor heat with candy thermometer and continually stir until 245 degrees.  Remove from heat, stir in vanilla and pour into greased 9X14 pan (the shorter or smaller the pan the thicker the caramels) and cool.  When completely cooled, cut and wrap in wax paper.  Best if kept in refrigerator, after a few weeks it will become sugary, but don’t worry, it won’t last that long. 🙂  Enjoy!!

    added it this morning! 🙂 They are really good. The recipe makes about 2 lbs, so feel free to cut in half or double it depending on your mood!! 🙂
